Incredible yet easy Red Lentil Stuffed Tomatoes for dinner when you’ve had “one of those” days.
Welcome to the Group B reveal day for The Secret Recipe Club. You’re probably wondering why I’m posting twice this month. Well, I offered to pick up an orphan rescue from Group A last week. If a blogger does not get there recipe posted in time, it means their partner blog will be left out. I hate it when that happens, so I had no problem stepping in. In addition to getting to know a new blog, I get to explore a whole bunch of new recipes. Lucky me! This week, I bring to you Dancing Veggies.
If you’re unfamiliar with the Secret Recipe Club here is a brief description. Each month, one member is assigned to another member from their group secretly (hence the name). That person selects a recipe to make and creates a blog post. Everyone in the group posts on the same Monday together and gets to see who had their blog and what recipe(s) they chose. And since there are four groups, each Monday of the month is a new “reveal day.”
Isn’t Dancing Veggies the cutest name for a veggie blog? It’s such an upbeat and happy blog name and it fit right into who Amanda is. She’s a newlywed and about to have a baby which is due Thanksgiving Day. WAHOO for her! She also works full time just like me, so I knew I would find recipes perfectly suited to busy weeknights. Amanda’s blog is full of veggie goodness and many are vegan as well. I couldn’t wait to dive right in.
Amanda has a lot of recipes to choose from. That hard part was choosing just one for this post. I wish I could have posted several, but that will happen over time since there are several I want to make. I was intrigued by the Black Eyed Pea Cakes. I’ve not cooked with black eyed peas, so this one may get me started. The Eggplant Feta Couscous combines three of my favorite ingredients; eggplant, feta cheese and couscous. It’s like it was written just for me.
I finally decided to make her Lentil Tomatoes. This stuffed tomatoes recipe is amazingly easy and worked out great for a busy night after work. I had one of “those” days and wanted something simple, healthy and tasty. I hit the trifecta with this recipe.

IT sounds like a lovely healthy weeknight meal. I’m a real fan of lentils and would cook with them more often but unfortunately my husband isn’t too keen!

Thanks so much for adopting me this month!!!! My hubby actually prefers his lentils on the mushy side so he would probably prefer yours to my more al dente lentils 🙂

I first decided to add more lentils to our diet after I bought a package of frozen vegetables from Target. Once we tasted them for dinner we were excited to find more recipes with lentils. This one looks delicious and will be high on our list to try. I’ll have to stop by and check out Amanda’s blog for more!
Simple, healthy, and tasty’s a combo I go for too. 🙂 And it looks like these stuffed tomatoes definitely qualify! Yum!
