One skillet dinner for those busy weeknights.
It’s football Sunday and it’s gorgeous outside! During the fall and winter times when it’s bone-chilling cold outside, I’m usually huddled on the couch watching my 49ers play. This week is different. First, the Niners have a bye and second, the sun is shining brilliantly outside so I want to be outside basking in it. So I’m going to go play, but I also want to bring you a super simple one skillet chicken dinner that will be your new go-to busy weeknight meal.
Since I purchased my Platinum Professional Cookware, I’ve been really enjoying the method it uses. It’s a waterless cooking system and enhances the flavor of my foods as well as keeps the moisture locked in. Waterless cooking is a low temp method which can be used on gas as well as electric stovetops. It preserves the flavor and nutrition of foods. Can’t beat that!
It took a couple of weeks to get the hang of it. They key phrase I had to keep repeating to myself was “Medium to low is all you need to know.” There is no cooking on high temps (except to boil water for rice or pasta) so this also saves on my electric bill. And here is one thing that I have to force myself NOT to do – PEEK! It’s normal to want to check in on your dish to see how it’s doing and I’m a checker. Well, with the Platinum system you must leave the lid on. NO PEEKING. UGH!
One of my favorite things about this cookware is the ease of making a meal using just one pot. This one skillet meal is super easy to make. I had not defrosted my chicken legs prior to cooking and that’s ok. With this system, defrosting is not mandatory, you just need to cook it a bit longer.
You don’t need a platinum system to make this chicken dish, you can very easily use a different set, so if you do, I would suggest adding a bit of olive oil to your pan so it doesn’t stick. Or take all the ingredients below (chopping the potatoes a bit smaller) and place them in a prepared baking dish and bake it for 30 minutes at 425 degrees. Which ever way you go, you’ll have a simple weeknight meal that’s tasty and healthy.
