My family loves football. Although we don’t agree on the same teams, we love to get together to watch a game and eat. We also have a family fantasy football league and I finally won a game this year. A week or so ago we got together at my nephews for a football party and I was tasked with bringing a side dish. I did. But I also thought this spinach artichoke dip appetizer would also be a good game day snack.
Our family gatherings are always a good time. We all lead such busy lives with work, church activities and travel that these times are precious and we value every moment. Of course the sports rivalry comes in and it usually means me taking a ribbing about my 49ers and me talking smack about the Raiders. But it’s all in fun and it usually ends with lots of laughter.
Everyone brought a dish and even hubby got into the act by prepping corn on the cob and taking care of the grill. This dip was a huge hit with the family so I’ll be making this again.

Baked Spinach & Artichoke Dip
Ingredients
- 1.5 cans artichoke hearts (non-marinated. Chopped)
- 2 cups chopped fresh spinach
- 1 Large green onion (chopped)
- 1 cup fat free sour cream
- 1 packet cream cheese (softened)
- 6oz shredded parmesan cheese
- 1/4 cup garlic cheese spread
- 1 packet Knorr Vegetable Recipe Mix

Although my team lost that day, I was consoled by this delicious dip. My family didn’t let me forget that their team won that day and mine didn’t. Oh well, next week. However this dip was a winner. It’s comfort food/game-day food/party food all wrapped in a nice bowl. This is going to be one of my go-to potluck appetizers. The family gobbled it up.
