Lidia’s Scallops with Mushrooms in Wine

One of my favorite shows to watch on weekend mornings is Lidia’s Kitchen. It airs on our local PBS station and I just love it. I have no idea how long she’s been on there but I discovered the show about a year ago. I love Italian food and I find her recipes fresh and delicious and her passion for cooking is contagious. A week or so ago she made scallops and I decided Lidia’s scallops were going on our dinner plate that night.

Lidia’s scallop were a weekend recipe since it took a bit of time and I’m unfamiliar with cooking scallops so I didn’t want to be rushed.  I wanted to focus on this dish to get it just right since scallops can overcook so easily or get rubbery. I didn’t want to have my newest kitchen adventure turn into a disaster.

Lidia’s Scallops & Mushrooms

Lidia’s Scallops & Mushrooms

Ingredients

  • 2 tablespoons olive oil
  • 1 Large clove garlic (crushed)
  • 4oz white button mushrooms (sliced)
  • 8oz baby bella mushrooms (sliced)
  • 2-3 scallions (chopped)
  • 1 Medium zucchini (sliced)
  • 2 tablespoons fresh oregano
  • 1/2 cup chardonnay wine
  • 2 tablespoons butter
  • 1/2 - 3/4lb sea scallops
  • ground pepper to taste

Optional

  • Balsamic Vinegar (to drizzle)

Directions

Step 1
Add oil to a large skillet. Heat over medium high heat. Add garlic and cook until fragrant. Add mushrooms, scallions, zucchini, oregano and wine. Cook down until most of the liquid is absorbed. Simmer on low. Add butter and allow to melt.

Step 2
In another DRY pan, heat on medium high heat. Add the scallops and sear each side for 4-5 minutes per side. Do not move the scallops around the pan. Season with ground pepper.

Step 3
Serve Scallops over the mushroom mix and drizzle with balsamic.

Hubby loved Lidia’s scallops as much as I did and the end result was just as I expected after watching her show. She gives a nice step by step presentation that can be easily copied at home.  She made scallops less intimidating and I’m excited to try other seafood recipes.
