It’s game day!! Football season has officially started and I’m excited. I have joined my family fantasy football league and am hoping to do better this year then the bottom third of the pack. If you’re like me, game day is also snack day. If you’re bored with the traditional chips, dip and wings, you’re not alone. Try this Eggplant & Sun Dried Tomato Spread and shake up your game day snack routine.
Hubby and I have a bit of a rivalry when it comes to football. He’s a Bronco’s fan and I’m a Niners fan. He was thrilled when I took Peyton Manning as my first draft pick, but don’t think that’s making me switch sides. I’ll root for Peyton all day long until he plays my Niners and he did during the pre-season. And the Niners lost. There was a lot of gloating after that game and not from me.
But at least I enjoyed this spread. I toasted some sourdough slices and put some garlic cheese on it. Then, I added a dollop of the spread on top and it made for a tasty game day snack.

Ingredients
- 4 Small eggplant (ends trimmed off and diced)
- 6oz jarred sun dried tomatoes (packed in olive oil)
- 3 cloves roasted garlic
- 4 tablespoons tomato paste (mixed with 1 cup of water)
- salt & pepper to taste
- crushed red pepper flakes to taste

Hubby isn’t as adventurous as I am in the snack department, but I’ll give him credit for trying it. I loved the flavor of the sun dried tomatoes and eggplant. It was quick to make too so you can spend more time with your party guests rooting for your favorite team and less time stressing over the stove.
