Having a garden means lots of fresh produce and it seems zucchini is one of those you will have plenty of. We just have two zucchini plants and they are providing us with lots of squash. It’s a good problem to have right? With the latest harvest, I went straight carnivore. Nothing says summer like burgers on the grill and this time I decided zucchini stuffed burgers were in order.
This is the latest zucchini from our garden. It was a fairly good size, not the gigantic ones I see at our local farmers market, but good sized anyway. I only used about half of this for the recipe but that was all that was needed. Having zucchini inside the burger sounded like a great idea.
This isn’t the first time I’ve made stuffed burgers. I made jalapeño popper stuffed burgers and also another couple of cheese stuffed burgers last year. This time, I stuffed them healthier and left the cheese on top of the burger. They were amazing.
Zucchini Stuffed Grilled Burgers
- 1/2lb ground beef
- 3 tablespoons barbecue sauce
- 4 pieces Hormel Dried Beef (chopped)
- 1 teaspoon Mrs. Dash Steak Seasoning
- 1/2 Large zucchini (grated)
- 1/2 teaspoon sea salt
- 1 scallion (chopped)
- 1 teaspoon garlic paste
This recipe idea was in fact my husbands. He came up with this culinary creation and I think he was spot on with this one. Adding the squash to the stuffed burgers made them lighter and gave it a nutritional boost too. I’m going to make them again! Good job hubby!
