Ever get a hankerin’ for some Cafe Rio? I do and their salads are some of the best around. When I go, I usually get a salad with steak or chicken and top it off with some of their delicious creamy cilantro dressing. After scouring the internet for a recipe, I couldn’t find anything that came close. So I pulled a bit of many recipes together to make this yummy Cafe Rio copycat dressing.
This isn’t just for salads as far as I’m concerned. I’d dip veggies in this. I would also use it as a topping for grilled salmon. I’d drink it straight out of the container. Face it, I’m addicted to the stuff.
