I have a great friend and co-worker named Penny and she is usually one of my guinea pigs when I create a new recipe. Well, she was telling me about a recipe she makes for her family that is fast and delicious. I finally got her to write it down for me and it was so simple and ready in 15 minutes. Penny’s Garlic Shrimp over Rice is now one of my go-to easy weeknight dinners.
My friend Penny leads a very active life. With her husband and three kids, they are always on the go. She looks for dinner ideas that are simple to make, healthy and that her family would love. She said this one is a hit with her kids. So when she gave it to me, I swore I’d make it soon.
Well, her recipe came in handy one night last week when I felt like it would be easier to call Papa John’s then cook. We were working in the yard cutting back the grape vines that seemed to be taking over and time ran away from me. Next thing I knew it was 7:30 and hubby was so hungry I thought he’d start munching on the vines we just cut back. Then I remembered Penny’s recipe. Her shrimp recipe, some peppers, onions and some instant rice and BAM… dinner was ready in 15 minutes.

Penny’s Garlic Shrimp with Rice

Ingredients
- 1 Medium green bell pepper (chopped into 1)
- 1/2 Medium red onion (chopped into 1)
- 1 Large clove garlic (crushed)
- 1 tablespoon sea salt
- 2 tablespoons olive oil
- 2 teaspoons lemon juice
- 1/2 teaspoon cayenne pepper
- 1 teaspoon paprika
- 1lb large shrimp (peeled and deveined)
- 1/2 chicken bullion cube
- 1 cup water
- 1 cup dry instant rice
Optional
- 1 teaspoon parsley flakes

WOWZA! I can see why her husband and kids love this so much. Her garlic shrimp recipe was incredible and putting it over the rice made for a complete meal. I added the veggies since they were conveniently on hand so it was cooked in one skillet and one saucepan, which makes for an easy clean up. This one would please any family as long as they’re shrimp fans. But I don’t see why you couldn’t substitute chicken for the shrimp.
