Chicken Thighs with Lemon Artichoke Sauce

Chicken Thighs with Lemon Artichoke Sauce

Ingredients

  • 4 chicken thighs (skin left on)
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 tablespoon olive oil
  • 4 cloves garlic (crushed)
  • 1 teaspoon oregano
  • 2 cups low sodium chicken broth
  • 1 fresh lemon (juice)
  • 1 can artichoke hearts (not marinated, 14 oz can)

Directions

Step 1
Pre-heat oven to 375.

Sprinkle thighs with the salt and pepper and bake uncovered for 35 minutes.

Step 2
While the chicken cooks, add olive oil to a medium saucepan and heat on medium. Add garlic and cook until fragrant, about a minute. Add the oregano, chicken broth & lemon juice. Bring to a boil, then reduce heat to simmer for 15 - 25 minutes. Add chopped artichokes and heat through. Serve by spooning the mix over chicken.

I did the same as Danielle did when she initially cooked her chicken thighs. She cooked up some Orzo with peas, garlic, butter and parmesan. It was perfect with this chicken. For something that is easy to make, it sure tasted like I spent all day prepping a gourmet chicken dinner. You should hop on over to Mostly Food and Crafts and check out Danielle’s recipes. There are more there that I want to try.
