Don’t you just love your slow cooker? I use it often in the winter for soups and comfort food. During the summer months, I use it a lot to keep the kitchen cool in the 90+ temps. After a day in the yard/garden, the tangy onion ribs my slow cooker put out was just what the doctor ordered.
The last weekend saw hubby and I working in the yard almost exclusively. The yard doesn’t need a lot of work or anything, we just wanted to get it “yard party” ready. Our previous home had no space for entertaining so we really want to make up for that here. Hubby worked on the mowing, fertilizing and cleaning out the shed while I planted flowers and herbs. The veggies are already in, just not ready to harvest yet. Utah has a later growing season then where I’m from in California. Last thing I wanted to do after that was stand in the kitchen and cook. So, I delegated dinner to the slow cooker and made some delicious pork that gave us back our spent energy and satisfied our hunger.

Tangy Onion Ribs with Mushroom Sauce

Ingredients
- 5 Medium country style boneless pork ribs
- 1/2 packet dry onion soup mix
- 1/2 cup water
- 2 tablespoons honey mustard
- 1 1/2 cup Sweet Baby Ray's barbecue sauce
- 2 tablespoons light white wine
- 1 tablespoon butter
- 1 cup mushrooms (sliced)
- 2 cloves garlic (crushed)
- 2 tablespoons cornstarch

Place the five pork ribs along the bottom of the slow cooker. In a medium bowl, mis the soup mix and water. Stir to combine. Add the honey mustard, barbecue sauce and wine and stir to combine. | |

Pour the sauce over the ribs and set the heat setting to high. Cook for 2-3 hours. About 20 minutes before the ribs are done, heat a skillet to medium heat and add the butter, garlic and mushrooms. Sautee the mushrooms for abut 5 minutes. Add the sautee mix into the slow cooker. | |

When pork is done, remove from the slow cooker and add the cornstarch to the sauce. Stir until thickened, about 2 minutes. Add the pork back to warm through then serve. |

Pork ribs are delicious when slow cooked. The tangy onion ribs simmered in a sauce that was the icing on the cake. It was so easy to put together and clean up was a snap. I can’t wait to make this and pair it with some of the fresh veggies we have growing in our yard. For this dinner, simple steamed broccoli and some beans made it colorful and delicious. And now we’re ready for our next yard project.
