Welcome everybody to the May edition of the Crazy Ingredient Challenge!  If you are a first time visitor to the Crazy Ingredient Challenge, let me tell you about it. The challenge is to create a recipe with two truly unique ingredients that are not traditionally cooked together. I just love this adventure and it’s so fun to “think outside the cookbook” and come up with something amazing. Spearheaded by the lovely Dawn at Spatula’s On Parade, this is one group of talented chef’s who come up with these recipes each month. Want to know what May’s challenge is? You are going to just love it…… Mango & Chipotle Peppers. Sweet & spicy…. this is going to be awesome!

This was a truly interesting combination. I love both ingredients and was eager to jump into the challenge and see what can be done with both. I’m a mango fan big time and summertime finds me eating a lot of it. I also love the smokiness of the chipotle peppers in adobo sauce. It’s got enough heat and I find a little goes a long way.

This month’s challenge was a challenge to get done as well. As a group, we vote on two lists of ingredients and the top of each list wins. This was selected on April 30th, however two major medical issues got in my way this month; hubby’s heart catheterization 10 days ago and a trip to the Pet ER this past weekend after my dog Benny swallowed some foxtails. Not fun. Not fun at all. So it was down to the wire and this was what I came up with. Oh, and Benny is fine. They got them out and he’s back to his bouncy furry self.

Fiesta Chipotle Mango Chicken
Serves 2
Prep time 5 minutes
Cook time 35 minutes
Total time 40 minutes

Ingredients

  • 1 Large mango (peeled and chopped)
  • 1-2 chipotle peppers in adobo sauce
  • 1 tablespoon orange preserves
  • 1 teaspoon chopped green onion
  • 1 teaspoon Mrs. Dash Fiesta Lime Seasoning
  • 2 Medium chicken thighs (skin left on)
  • salt & pepper to taste

Directions

Step 1
Preheat the oven to 425 degrees.

Add the mango, chipotle peppers, orange preserves and green onion in a food processor and pulse until smooth. Set aside.

Step 2
Place the chicken thighs in a glass baking dish. Lift the skin off the chicken and sprinkle half of the Mrs. Dash onto the chicken. Place the skin back on. Salt and pepper to taste.
Step 3
Pour the mango mix on top of the chicken and bake, uncovered, for 35 minutes.

This one was pretty amazing. When you first bite into the chicken, the sweetness of the mango is what you first notice. Then the smokey flavor, then the heat. It’s not a “burn your face off” kind of heat, although if you added more chipotle peppers, you could achieve that. I used two peppers in my recipe and I think the heat level was perfect. Hubby would have preferred just one pepper, but he wasn’t home so he had no say this time. Ha ha!

    I’m loving mangoes this spring, in from who knows where tropical country…And the chipotle addition looks interesting too! Glad to hear Benny is OK. I see that he is also into interesting food combinations–foxtails & dog food?

    Thanks for stepping in to help organize the group.

    I love the recipe you came up with. I usually go for boneless skinless chicken breasts, but I have heard the thighs are more flavorful and only slightly more fat. I’ll need to pick some up and try this.

    Yum! I love chipotle anything, and think it would be great with mango 🙂 I make a chipotle peach salsa to can in the summer and it is delicious. Can’t wait to try it!
