I cannot believe how warm it was today! We hit 93 degrees at one point and it sure it telling me summer is almost here. During the winter, I love some mashed potatoes and it’s one of my ultimate comfort foods to pair with steak or chicken. However, when the weather warms up like it is now, I still want my taters but not the heaviness of it. I’ve made mashed potatoes with an equal amount of potato and cauliflower, but this time took the ratio of cauliflower to potato as 4:1. Then added chopped kale for some color and texture to create a delicious comforting cauliflower kale side dish without the heaviness of too much potato.
This recipe was quite good. Hubby loved the creaminess of the cauliflower and the texture of the kale. Of course a recipe isn’t “Lorified” until it has garlic added. And cauliflower kale mashers are perfect for warmer weather when we’re looking for foods on the lighter side.

Cauliflower Kale Mashers
Ingredients
- 1 Medium red potato (chopped)
- 1 Large head of cauliflower (cut into florets)
- 2 Large kale leaves (chopped)
- 3-4 cloves roasted garlic bulbs
- 1 tablespoon Country Crock Spreadable Butter
- 1/2-1 cup fat free plain Greek Yogurt
- 1/8 cup parmesan cheese
- 1/2-1 teaspoon ground black pepper
Directions
Step 1 | |
In a large pot of boiling water, add the potato. Boil 5 minutes. Add cauliflower and boil and additional 8-10 minutes. Turn off heat and add kale & garlic. Let sit 5 minutes. | |
Step 2 | |
Drain and add yogurt, butter, parmesan and pepper. Using an immersion blender, blend until desired creaminess. Serve. |

Healthy mashed potatoes that are bursting with flavor and nutrition. This may be my new go-to potato recipe since it’s so good and lighter too. With our veggie garden in full swing, we are so looking forward to trying new veggie recipes and creating some fun meals. Stay tuned!
