The other day, I received an email from a lady who thanked me for helping her stick to a healthier eating plan. She was loving the review and giveaway I have going for the Spiralizer® and how easy it is to make vegetable “pasta.” She spoke of challenges she had with her support system and that she wasn’t able to eat with them when they ate pasta and such and that I helped her with my blog. I was so moved by her email that I decided to make spiraled roasted beet noodles just for her. So Char, this recipe is for you.
I am so in love with my Sprializer®. I’ve made zucchini noodles, potato spirals and am looking forward to whatever my creative juices decide on next. I have loved beets since I was a kid and thought a beet pasta would be good for my readers and my new friend. This one is not only delicious, it’s very healthy and the variety of color makes it a pretty dish as well. Relax and enjoy this one. It takes less then 20 minutes to prepare so it’s perfect for busy weeknights.
Roasted Beet Noodles with Yellow Tomatoes
- 2 Medium fresh beets (peeled)
- 1-2 tablespoon olive oil
- 1/2 teaspoon sea salt & garlic seasoning
- 1 tablespoon garlic flavored olive oil
- 6oz yellow sunburst tomatoes (cut in half)
- 2-3 fresh basil leaves (slivered)
- salt & pepper to taste
- chopped fresh mozzarella cheese (to garnish)
Oh my this was so good. Hubby didn’t like beets. At. All. Or even tomatoes when we first met. But, I roasted fresh beets a while back and it turned a corner. He wants to try this recipe as well. When I made it, he was working that night so I left him some in the fridge for him to take for his lunch break today. Let’s hope he loves it as much as I do.
If you’re looking to eat healthier, veggies are a great way to go. Kudos to the health benefits of beets which include lowering blood pressure (I have high blood pressure, so this one is key for me), increased stamina and is rich in immune boosting vitamin C and fiber. Plus, it is a source of betaine, a nutrient that helps protects cells, proteins, and enzymes from environmental stress. Gotta love them beets!!
