Today was one of those days where I wanted to make a nice breakfast but wasn’t in the mood for the standard bacon, eggs and toast. I wanted something different to treat Hubby to and wasn’t in the mood for pancakes.
You know what I mean?
Something that’s out of the norm but delicious at the same time. Since we slept waaaayyy in this morning, breakfast turned into brunch and my mind went to savory seafood crepes as our brunch today.
When we were going through my mother-in-laws kitchen, I realized she had as big of a cookbook obsession as I did. You name it, she probably had it. Her favorite appeared to be Taste of Home Annual cookbooks and she had many spanning several years. I kept many of them and added to my ever growing collection. Do you read cookbooks for fun? Well, I do.
I adapted this recipe from the Taste of Home Contest Winning Annual Recipes 2009 cookbook. I mostly kept the crepe batter recipe true to form, but I transformed the stuffing to a seafood lovers delight. These seafood crepes are perfect for a romantic Valentines Day brunch. You really can’t go wrong by customizing them to your own tastes.
According to the cookbook, this recipe was the grand prize winner for the Breakfast and Brunch category and I can see why. I think this would be a nice Valentine’s Day brunch to share with your special someone. Add a chilled mimosa and some fruit and it’s perfect!

The crepe was so delicious and the best part is you can add what ever you want to the inside. I went with seafood crepes since it was lighter and I was about to go shovel snow and didn’t want to feel weighed down. It’s perfect for a special occasion too!

Yum! We love seafood. A friend brought us some creamy crepes right after I had my third baby. They were amazing. I always wished for the recipe, and now I’ve got one! Thank you!
