I think we’re almost unpacked! It seems to be taking forever but at least the kitchen is done. So glad to have this nice big kitchen to enjoy my cooking my adventures in. It feels so good to spread out and really dig into my recipes and such. With the days getting shorter and the temps getting colder, I seem to be reaching into the Comfort Food recipe arsenal. This one was no exception. We love salmon in our house and also spinach. I think adding fresh spinach to recipes gives it such delcious flavor and face it, it’s good for you too!
Aside from moving, we have the addition of three dogs. It has messed up our schedule somewhat, but we wouldn’t have it any other way. We’re settling into a routine, but in teh meantime it is taking up extra time. That’s why meals need to be simpler to make right now but without sacrificing delicious flavor and nutrition. Agree? So, after a rigorous day of unpacking and hubby putting in a doggy door, he was rewarded with a delicous and nutritious baked salmon dinner.

Baked Salmon with Spinach
Ingredients
- 3/4lb salmon fillets
- 3/4 cups white wine (divided)
- 1 Large shallot (sliced and divided)
- 1 teaspoon Two Snooty Chefs Italiano Capri seasoning
- 1 teaspoon olive oil
- 1 Large shallot (sliced into rings)
- 1 Large garlic clove (crushed)
- 1/4 cup fat free sour cream
- 1 teaspoon Tones Rosemary Garlic Seasoning
- 3 cups fresh spinach (loosly packed)
Directions

Pre-heat oven to 400 degrees | |

In a shallow baking dish, place the salmon. Pour 1/4 cup of the wine over the salmon. Add 1/2 teaspoon of the sliced shallots. Sprinkle the Italiano Seasoning over the salmon and drizzle with olive oil. Cover and place in the oven. Bake for 20 minutes. | |

When there is 10 minutes left on the salmon, start the sauce. Add a teaspoon of olive oil into a saucepan and heat on medium. Add the remaining shallot and garlic and cook until fragrant. Add the remining white wine, sour cream and Rosemary seasoning. Add the spinach and cook until spinach is wilted. Serve over the cooked salmon. |

If you haven’t already noticed, I have not unpacked my good camera so my pictures are not up to my standards. I had to use my iPhone 4 to take these since my mid-range camera was left in California in October. Hubby will pick it up on his next trip there and this weekend I’ll find my good one! Even if the picture is subpar, the salmon dinner was delicious.
