Welcome to the November edition of the Crazy Ingredient Challenge! I was so bummed to have missed it last month. With travel, moving and then getting sick, I was pretty out of it for the majority of Setpember & October. If you haven’t visited before, this challenge is to create a recipe with two truly unique ingredients that are not traditionally cooked together. I’m always so excited to share with you the results of the challenge and each month and just keeps getting better and more creative. Spearheaded by the lovely Dawn at Spatula’s On Parade, this is one group of talented chef’s who come up with these recipes each month. You all ROCK!
So I know you’re on the edge of your couch… or chair… or park bench…. November’s ingredients are…… Orange (or citrus) & Breadcrumbs!
I know a few of you looked beyond the ingredients to that cute little cutting board in the back. Isn’t it adorable? Now back to our regularly scheduled recipe…… This one was a bit of a head scratcher, but after giving it some thought, I decided to go with an appetizer. This idea was inspired by the Warm Goat Cheese Salad at Red Rock Brewery in Murray, UT. The goat cheese in the salad is breaded and baked, then place on a bed of lettuce with tomatoes, pears and a pesto dressing. Now you’re wondering how I’d include orange in that? Well, read onto the recipe my good folks…. I added orange not only in the breading, but also for the topping! It was wonderful!!

Baked Goat Cheese Medallions with Orange Honey Sauce
Ingredients
- 1/2lb soft goat cheese (sliced into 5 slices)
- 1 cup italian seasoned bread crumbs
- 1 Large egg (beaten)
- zest of one medium orange
- juice of 1/2 medium orange
- 1 tablespoon honey
Optional
- 1/4-1/2 teaspoon corn startch (for thickening)

I thought it would be cute to lay them on orange slices for a decorative effect. Plus, I love orange slices anyway. You’re probably wondering how they tasted. I think the orange zest added quite the zing to the breading and the honey orange topping gave it good sweetness to offset the tartness of the goat cheese. Even hubby, who hates goat cheese, gave it a whirl. Yeah, he didn’t like it all that much, but I guess I hoped my orange addition would change his mind. Maybe next month………………
