If you’re like a lot of moms (and dads… and grandparents) sometimes you find it to be a struggle to get the kids to eat their veggies. I know I was a veggie problem child growing up and I was so picky. My mom was pretty creative and I recall loving her zucchini and even peas. Cauliflower on the other hand was another story. I love it now, but remember disliking it as a child. I made these cheesy cauliflower domes a couple of weeks ago and I think they’ll be a real winner with the kids too.
I’m sure you have noticed a lack of recipes posts in the last couple of months. We have been out of state to California three times with family illness and eventual passing of my mother in law. I’m typing this now in a hotel in Las Vegas as we travel home with my mother in laws three dogs. Yep, we added to the family!! Maybe I’ll start making doggy biscuits?? Challenge accepted!! On top of that, we moved in October. If you have moved recently, you’re probably still searching for your can opener and other essentials. The house is a mess and now will be more chaotic with three pups bouncing around. Never fear though…. recipes will be coming since we have to eat after all!
In the meantime, enjoy these cheesy cauliflower domes, inspired by the TV Show “Under the Dome.” Like so many of my friend, I have been completely obsessed with that show and can’t wait until next season!!

Cheesy Cauliflower Domes
Ingredients
- 1 Medium head cauliflower (cut into florets)
- 1 cup shredded cheese (Mexican style)
- 1 tablespoon butter
- 1/2 cup Italian seasoned bread crumbs
- 2 tablespoons grated parmesan cheese
- 1/2 tablespoon italian seasoning
- 1-2 clove garlic (crushed)
- 2 Large eggs (beaten)
- salt and pepper to taste

These are wonderful! That is all I have to say. And they can be seasoned to whatever you are having so if you’re having italian night, add oregano and basil. If it’s cajun night, spice these domes up with some flavah! Endless possibilities with cheesy cauliflower to get your kiddos to love their veggies.
