Seared Chicken with Anaheim Peppers and Tomatoes

Delicious seared chicken that is topped with sautéed red onion, tangy anaheim peppers and two types of fresh tomatoes for amazing flavor.

Chicken with Tomatoes and Peppers

Ingredients

  • 2 tablespoons olive oil (divided)
  • 1/4 Large red onion (diced)
  • 2 tablespoons Mrs. Dash Southwest Chipotle Seasoning (divided)
  • 1/4 teaspoon garlic powder
  • 2 Medium anaheim peppers (diced)
  • 1 cup small yellow tomatoes
  • 1 cup red grape tomatoes
  • juice of one lime
  • 2 Medium boneless skinless chicken breasts
  • Salt and Pepper to Taste

Directions

Step 1
In a small saucepan, add 1 tablespoon olive oil and heat to medium. Add the red onion and cook for 5 minutes.
Step 2
Add 1 tablespoon Mrs. Dash, anaheim peppers and garlic powder. Stir and cook 3-5 minutes. Add the tomatoes and lime juice. Cover and reduce heat to simmer. Stir occasionally.

Step 3
In a medium saucepan, add 1 tablespoon of olive oil. Heat to medium. Take the chicken and lay them on a piece of clear plastic wrap. Season with salt and pepper on both sides. Season both sides with the remaining Mrs. Dash. Cover with plastic wrap and pound thin to about 1/4 inch thick.
Step 4
Cook the chicken in the medium saucepan, 3-5 minutes per side or until no longer pink in the middle. Serve with the pepper mix on top.

This chicken was a delicious dish that was also very pleasing to look at with the bright red, yellow and green. And was it ever easy to prepare which makes it perfect for a busy weeknight after homework, running kids to their events or a full day of work. You could also double or even triple the recipe if you’re having guests for dinner. Hubby had not heard of these peppers until the neighbor brought them over and he was quite pleased with the flavor. He doesn’t like spicy foods nearly as much as I do, so he was worried they would be tongue scorchers. They were not and he gave this one a thumbs up.
