I remember mentioning last week that I have two neighbors that took their small patch of land and turned into a productive vegetable garden. Their gardens are amazing and again I was blessed with some of their crop. This time, they gave me 4 anaheim peppers. I didn’t have a clue what to make last night, but after receiving these peppers, I decided a colorful summer chicken dish was just what was needed.
If you have never eaten an anaheim pepper, you should give them a try. They are not hot like jalapeños but do have a bit of a kick. They are great for chopping up to add to a meat dish like I did here or you can slice them open and stuff them with all kinds of goodies like cheese, shrimp and crab. A lot of times they are used to make chili rellenos, which is one of my favorite meals when I eat at a Mexican restaurant. I may try to make my own rellenos later on this week, but for now, here is a moist chicken dish that explodes with the flavor of the peppers and two types of fresh tomatoes.
So simple, but yet this looks so delicious! YUM!
