I mentioned earlier in the week on Wednesday when I posted the Deviled Eggs with Fresh Beets, that I had tried another beets and eggs recipe. Well, this is my other recipe. I just love meatloaf and have made a variation or two in the past. My Barbecue Meatloaf was somthing I tried a couple of years ago and it was pretty good. This time, I focused on portion control and made Muffin Tin Meatloaves with beets and green onions. This not only helped me to avoid eating the whole loaf in one sitting, but they were darn good.
Some of you are looking at the picture with the bright purple beet spots and thinking this doesn’t look to appetizing. I get that, however I’ve been trying to incorporate more veggies into my diet with the Weight Watchers program so this one popped in my head when the challenge was selected. I have loved beets since I was a kid and since I love meatloaf too, this seemed like a natural choice for me. As I mentioned earlier on the Deviled Egg post, hubby was not much of a beet fan, but when I roasted fresh beets for these two recipes, he was hooked. Just like kale, he requests these veggies often now.
Muffin Tin Meatloaves with Beets

- 1/2lb ground beef 85/15
- 1 egg
- 1 teaspoon Mrs. Dash Steak Seasoning
- 1 tablespoon A1 Steak Sauce
- 1 tablespoon Worchestchire Sauce
- 1/2 green onion (minced)
- 3/4 cups cooked rice
- 1 teaspoon garlic powder
- 1/2 cup italian seasoned bread crumbs
- 1 cup chopped cooked fresh beets
- salt and pepper to taste
- 1/4 cup Sweet Baby Ray's Honey BBQ Sauce
- 1/4 cup ketchup

What was the result of this little experiment? Some darn good meatloaves!! You have the flavor of the traditional meatloaf with a beet sweet spot sprinkled in there in almost every bite. Yes, the purple color is non-traditional but since purples and lavendars are a favorite color of mine, I thought they looked great! For my cooked rice, I had leftover Chicken Flavor Rice-A-Roni I needed to use so in it went to the meatloaf mix. I think it added just a bit more flavor to it.
