Happy Summer everyone! This is the time of year that we spend most time cooking outdoors in order to keep the house cool from the oven. This is why you’ve seen so many grilled recipes and recipes using skewers. Well, here is another skewer recipe for you with moist delicious marinated chicken and whatever veggies you may have on hand. The marinade is the star of the show here and it made the chicken amazing!
We eat lots of veggies in the summer as well with the abundance of them at Farmer’s Markets and in the stores. I love our Salt Lake Farmer’s Market and we try to go once a month. When we do not, we order from our Community Co-Op to get locally grown fresh veggies. For this recipe, I had some mushrooms leftover, part of an onion and a few yellow and red tomatoes. Add the marinated chicken, and you have one fresh and delicious meal.

Marinated Chicken and Veggie Kabobs

Ingredients
- 1/4 cup extra virgin olive oil
- 3 tablespoons balsamic vinegar
- 1 teaspoon garlic powder
- 1/2 scallion (chopped)
- 1/2 teaspoon Mrs. Dash Chicken Seasoning
- 1 teaspoon poultry seasoning
- 1 teaspoon herbs provance
- 1 Large boneless skinless chicken breasts (cut into 1)
- 2 strips bacon (cut into squares)
- 10 basil leaves
- 10 white mushrooms
- 1/2 Medium red onions (cut into squares)
- yellow and cherry tomatoes
Note
If you are using wooden skewers, be sure to soak them for a good 30 minutes so they don't burn.

Stop the presses!! These were so good. They key is to let the chicken set in the marinade as long as possible. I recommend overnight, but a good two hours works. This is an easy meal, minus the marinating time. What I did was marinate the chicken while hubby and I were up at the gym and pool. After that nice bit of relaxation, putting the dinner together was a breeze.
Here is an interesting tidbit. When I met hubby, he wouldn’t get near a tomato. Now when I go to the store, he asks “Can you bring me some yellow tomatoes?” I about fainted the first time I heard that. They sure were good on the skewers too!
