It appears that I’m always looking for new ways to incorporate spinach and kale into my meals. This is especially true since I started the Weight Watchers program. Both of these delicious greens are great additions to other foods such as hamburger, pasta, soups and now red lentils. Not only was this nutritious and tasty, it was also rather colorful. I chose red lentils over the traditional greyish ones just for that reason. I wanted my food to pop on my plate.
The one thing I really like about red lentils is they do not require soaking. I know in previous posts I talk about soaking black beans, garbanzo’s and pintos but with these, it’s cooking time only. Of course if you purchase them in bulk as I do, it’s very important to rinse them well beforehand since there could be dirt and stuff there and who wants that?
This side dish was probably one of the easiest I’ve made in a long time. Boil water, add lentils, add spinach and seasoning an voila! A side dish worthy of a queen.
We love lentils and this dish will be a definite hit at our house!
