Just how many barbecues have you attended since summer began? Three? Four? Probably a lot and there were probably times you were asked to bring a side dish. With me, I can only make so many batches of Pineapple Deviled Eggs or Pasta Salad. I wanted to try something just a big different and adapted this Lime & Garlic Cabbage Tomato Salad from several refreshing dishes I found on the net and Pinterest.
This salad is nice and light and reminds me that it is summer and to enjoy my outdoors as much as possible. The bonus part of this recipe is it is Weight Watchers friendly, vegetarian and vegan. Probably gluten free too, however I don’t know a lot about that. I found this to be an easy dish to whip up for barbecues and potlucks and maybe even to keep in your cooler for camping trips. And with all those fresh tomatoes growing in our gardens, we could all benefit from more ways to use them.

Lime and Garlic Cabbage Tomato Salad

Ingredients
- 1 Medium head of cabbage (shredded)
- 2 vine ripened tomatoes (cut into 1 1/2 inch pieces)
- 1 teaspoon garlic (minced)
- 2 tablespoons fresh lime juice
- 2 tablespoons olive oil
- salt & pepper to taste
Directions
Step 1 | |
In a large bowl, smash the garlic so it's of a paste-like consistancy | |
Step 2 | |
Whisk in the lime juice and olive oil until well blended. | |
Step 3 | |
Add the cabbage and tomatoes and toss until they are well coated. Salt and pepper then toss again. Chill for 2 hours or more in the fridge before serving. |

I think the first thing hubby said when he ate this was “needs more garlic.” I think it had just enough, however if you love it, go ahead and double the garlic ingredient. I think it would still be good and it would keep those pesky vampires away.
There you have it. A Weight Watchers friendly recipe that is simple yet bursting with flavor. I also like that the cabbage retained it’s crunch, even the next day. YUM.
