Happy Hump Day everyone! I’ve been so kind as to not post a bunch more kale recipes lately, but this one I had to share! This is a delicious Fiesta Lime Tilapia dish that was baked in a foil wrap with mushrooms, kale and a squeeze of lime juice. Where did I come up with the name? Well, the tilapia was seasoned with Mrs. Dash Fiesta Lime seasoning, which I put on EVERYTHING these days.  Corn on the cob, chicken, fries… you name it. So why not add it to my Tilapia foil pack?  And Fiesta Lime Tilapia was born.

Hubby and I just love the light flaky texture of tilapia and it is such a versatile fish too. Because of it’s mild flavor, it can be prepared any way you can think of. A favorite of mine is fish tacos. It flakes so nicely and with some white sauce and cabbage, you have an amazing dinner. With this dish, I used my all time favorite Fiesta Lime seasoning. I think this seasoning is as versatile as the fish is so what better way to make it? By cooking it in the foil pack with my veggies and  adding fresh lime juice, I had a delicious dinner that was fresh tasting and Weight Watchers friendly.

Foil Wrapped Fiesta Lime Tilapia with Mushrooms & Kale

Foil Wrapped Fiesta Lime Tilapia with Mushrooms & Kale
Serves 2
Prep time 5 minutes
Cook time 20 minutes
Total time 25 minutes
Allergy Fish
Meal type Main Dish
Light and flaky tilapia baked with the veggies gives everything a nice flavor.

Ingredients

  • 2 cups chopped kale
  • 6 white mushrooms (sliced)
  • 2 tilapia filets (4 oz each)
  • juice of one lime
  • 2 teaspoons Mrs. Dash Fiesta Lime Seasoning

Directions

Step 1
Preheat oven to 350 degrees. Roll out two sheets of aluminum foil
Step 2
Lay the 1/2 the kale on each foil sheet in a pile. Add 1/2 the mushrooms to the top of that. Squeeze lime juice over the mushrooms and kale.
Step 3
Add the tilapia to the top and sprinkle 1/2 of the Mrs. Dash on each. Wrap up the foil and bake for 20 minutes.

I don’t know how many of you have cooked your entire meal in a foil pack, but I have on several occasions not just in the oven but on the grill too. I think it makes the food taste better and the flavors compliment each other. The Fiesta Lime Tilapia was no exception. Everything was well seasoned and it came out fresh and delicious. I had some fresh broccoli with it and a little bit of mashed potatoes I had leftover from a previous meal. Just a great weeknight meal!
