Cranberry & Goat Cheese Stuffed Chicken

Another month for the Crazy Ingredient Challenge! I’m always so excited to share with you the results of the challenge and each month it gets more and more fun (and creative). Spearheaded by the lovely Dawn at Spatula’s On Parade, this is one group of talented chef’s who come up with these recipes each month. You all ROCK!


As I type this, I have no idea what the other CIC chefs have been up to, but I do know this. I’m sure it’s amazing. So, what are the ingredients this month? ……<drum roll please>…….. Cranberries and Shallots!!

My brain immediately went into overdrive.  There were so many ideas! I love cranberry and my feeling is that it’s not just for Thanksgiving time, it’s a staple of my diet. For this challenge, we could use cranberries in any form; canned, dried, fresh, you name it.  I got wild and used two forms of cranberries to make a heavenly stuffed chicken breast that was sweet and savory at the same time.

Cranberry & Goat Cheese Stuffed Chicken Breasts

Cranberry & Goat Cheese Stuffed Chicken Breasts

Ingredients

  • 2 Medium boneless, skinless chicken breasts (pounded to 1/4 inch thick)
  • salt and pepper to taste
  • poultry seasoning to taste
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 2 Large shallots (chopped, divided)
  • 1/2 cup dried cranberries (rough chopped)
  • 4oz soft goat cheese
  • 1 tablespoon fresh marcielle basil (chopped)
  • 1/2 cup canned whole berry cranberry sauce
  • 2 tablespoons white wine

Directions

Step 1
Preheat the oven to 350 degrees. Seasoned the chicken with salt, pepper and poultry seasoning. Set aside.
Step 2
In a medium skillet, add the butter and olive oil. Heat to medium. Add the shallots and cook, about 3-5 minutes, or until fragrant. Set aside.
Step 3
In a medium bowl add the cranberries, goat cheese and basil. Blend together well. Add half the shallots into the goat cheese mix and blend together.

Step 4
Lay each chicken breast out and spread half of the goat cheese mix on each. Roll up and tie with cooking twine. Place in a glass baking dish and cook in the oven for 20 minutes. Optional - Add wine to the baking dish before putting it in the oven.

Step 5
While the chicken is cooking, mix the canned cranberry with the wine and the remaining shallots. Refrigerate until ready to use. To serve, slice the chicken into rings and spoon the sauce over the chicken.

Talk about good! I loved the sweet cranberries, the tart goat cheese and those shallots that gave the entire dish a magical boost of flavor. The sauce on top was good too. I think shallots and cranberries should be used together frequently.

    I’m not big on goat cheese but this sounds and looks great. I love cranberries with chicken. I had considered stuffing some chicken. Now I have to.

    I’m so making this! I don’t like goat cheese but do you think blue cheese would be okay or what would you suggest? Is marcielle basil a basil from France? Where can I find it or can I use Italian or purple basil? Visiting and pinning this from #wowlinkup

      I think Blue Cheese would be great in this and so would a flavored cream cheese. As for Italian basil, I think that would work too. The Marcielle basil came with my AeroGarden and it’s quite good. I’m going to try to find some in stores and I’ll let you know where (if I find it!). Thanks for visiting.

    I am not big on goat cheese, but I think it would go wonderfully with this great dish… I love how you used two different types of cranberries.. Perfect for this challenge.
