Guess what day it is? Hump Day!! Happy Wednesday everyone. Nearly every week I at this time I think of that commercial with the camel. I still makes me laugh every time I watch it and I have no idea why it still makes me giggle like a little school girl. But it does. Nothing like getting off topic right away when I have a recipe to share with you. Our local grocery store, Harmon’s, had a fresh meat sale and I picked up a few packages of ground chicken. I very rarely cook with ground chicken and I have no idea why not, especially when this chicken and spinach manicotti came out so good and so much lighter then expected. I included lots of fresh spinach which is really good for you too.
Out of curiosity, I googled manicotti. I found a dictionary description that says it’s “a dish consisting of large, tubular noodles stuffed with a mild cheese and baked in a tomato sauce.” That’s very vague. It should say something like “a dish of large, tubular noodles stuffed with leftover veggies, cheese and what protein you have on hand.” I say that because it’s how I make mine. Find a meat (not every time, but sometimes), cheese and raid the veggie drawer to make a delicious dish that the family will beg for.
Baked Chicken and Spinach Manicotti
- 3/4lb ground chicken
- 1/4 packet Great Value onion soup mix
- 1 tablespoon olive oil
- 1 cup chopped fresh spinach
- 1 tablespoon chopped fresh parsley
- 1 teaspoon minced garlic
- 1 cup shredded mozzarella (plus more to top (optional))
- 1/4 cup grated parmesan cheese
- 6 manicotti tubes (cooked according to package directions)
- 1-2 cup marinara sauce
I really like manicotti with it’s versatility. It’s a great way to use up veggies that need to be eaten. You just mix it up with your meat and dinner is almost on the table. By making it with leftover veggies, you’ll have a different dish each time you make it.
This baked up beautifully cheesy and good. Hubby was in love with it… and there was no kale! You know what a kale-a-holic he has become and you’ll find out just how much in the next few days when I post a recipe he created! I kid you not.
