Cucumber and Cantaloupe Salad with Capers and Fresh Mint

Cucumber and Cantaloupe Salad with Capers and Fresh Mint
Serves 4-6
Prep time 5 minutes

Sweet & tart with a hint of mint for extra flavor

Ingredients

  • 1 Large cucumber (cut in half and peeled into ribbons)
  • 1/2 Large cantaloups (cut into bite sized chunks)
  • 1 cup fat free plain yogurt
  • 2 tablespoons capers (plus some for garnish)
  • 1 tablespoon fresh mint leaves (chopped fine + extra for garnish)

Directions

Step 1
Just one step. Take your ingredients and mix them all together. Cover and chill in the fridge for 1-2 hours then serve.

Light refreshing cucumber cantaloupe salad with a boost of flavor with capers and fresh mint. Great for cookouts and potlucks. I love how fresh this tastes.

    Wow, am I glad I clicked your link at the Pretty Pintastic Party! I LOVE cantaloupe! I like it with salt, and it’s good wrapped in prosciutto too. I’ve never thought of pairing it with capers for that salty component, but I’ll be trying this ASAP. I recently adopted a vegan diet so I’ll leave out the yogurt – it sounds like it will be tasty with or without it!
