#CIC – Cucumber & Cantaloupe Salad with Capers

 Light refreshing cucumber cantaloupe salad with a boost of flavor with capers and fresh mint. Great for cookouts and potlucks. I love how fresh this tastes.
Another month for the Crazy Ingredient Challenge! I’m always so excited to share with you the results of the challenge and each month it gets more and more fun (and creative). Spearheaded by the lovely Dawn at Spatula’s On Parade, this is one group of talented chef’s who come up with these recipes each month. You all ROCK!

As I type this, I have no idea what the other CIC chefs have been up to, but I do know this. I’m sure it’s amazing. So, what are the ingredients this month? ……<drum roll please>…….. Cantaloupe & Capers!!


My brain immediately went to a refreshing summer salad.  It’s been so warm here and summer just screams fruit salad to me. This was a very interesting combination to use to come up with a salad and I had to think of what other ingredients would work to bring these two together. I have an AeroGarden and have been growing fresh herbs. My mint is the bully of the garden and has taken over.  So I snipped a bunch of mint leaves and to the kitchen I went.

    Wow, am I glad I clicked your link at the Pretty Pintastic Party! I LOVE cantaloupe! I like it with salt, and it’s good wrapped in prosciutto too. I’ve never thought of pairing it with capers for that salty component, but I’ll be trying this ASAP. I recently adopted a vegan diet so I’ll leave out the yogurt – it sounds like it will be tasty with or without it!
