Happy Saturday everyone! Hope you’re having a weekend of sun and fun. Last weekend, my church held several ladies Tea Parties throughout the Salt Lake Valley. This entails a small group of women, about 6 total, getting together for tea and fellowship. My group leader thought it would be fun to do an outdoor brunch in her lovely shaded yard. Everyone was to bring something and I was assigned a potato dish. Not wanting something too heavy, I opted to use frozen hash browns and fill it with veggies. This is my hashbrown casserole and it’s full of red pepper, chopped fresh spinach and a whole lotta love.
If you’re from Utah, you probably know what Funeral Potatoes are. I love them and there are so many recipes out there that there is one for everybody. I starting thinking about making them but changed my mind and used them as inspiration for this dish. Yes, a can of cream of chicken soup went into it, but adding the red pepper and spinach, gave it some pops of color as well as some crunch and texture.
Brunch Hashbrown Casserole

- 1 can cream of chicken soup (10.25 oz)
- 8oz shredded cheddar jack cheese
- 1/2 Large red bell pepper (diced)
- 1/4 Large red onion (diced)
- 1/2 cup butter (melted)
- 1 teaspoon salt
- 1 teaspoon ground black pepper
- 1 tablespoon chopped fresh dill
- 1 cup chopped fresh spinach
- 2lb frozen hash browns (thawed)
- breadcrumbs (to top)
Substitute cream of mushroom for the chicken to make it vegetarian friendly
Our leader made a delicious veggie quiche as the main dish with lots of veggies, so this side dish complimented her wonderful quiche perfectly. It wasn’t heavy even with the cheese and soup which is always good any time. The quiche, this hashbrown casserole and the fresh fruit was the perfect brunch meal for our tea party. We really enjoyed the fellowship and the new friends made that morning. Love it when the ladies can get together.
What did Hubby think? Hubby was just grateful he had lots of leftovers to eat with his dinner that night. He wanted to take a chunk out of it before I left the house but I told him that was bad manners, lol. He said this is on his “Lori must make this again” list. The pressure is on……
