Magically Delicious Strawberry Muffins

Ingredients
- 2 cups all purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 stick butter (softened)
- 1 cup sugar
- 2 Large eggs
- 1 teaspoon vanilla
- 1/2 cup 1% milk
- 1 1/2 cup fresh strawberries (diced)
Note
Substitute diced fresh peaches for a different twist.
Directions
Step 1 | |
Pre-heat your oven to 375 degrees. Sift the flour, baking powder and salt in to a bowl or the bowl of your stand mixer. Set aside | |
Step 2 | |
In another bowl, cream the butter and sugar together. Add the eggs, one at a time, and beat together. | |
Step 3 | |
Turn the stand mixer on the first low setting and add the milk and egg mix, alternating between the two. If you're hand mixing, follow the same instructions and alternate the eggs and milk. Mix until well blended together. Fold the strawberries into the mix. | |
Step 4 | |
Put an equal amount of the batter into a greased muffin 12-count muffin tin or you can use cupcake liners. Bake for 25 to 30 minutes or until toothpick comes out clean. |

Mouthwatering moist strawberry muffins that melt in your mouth. Ate them up, nice and warm with a bit of butter. It was muffin-heaven!! You can also substitute fresh peaches or any other fruit to shake up the recipe. It’s really up to you, but the sweetness of the strawberries made this muffin amazing.

I made these twice in one week, after the seeing them here. I am in love (and so is my family!!). The strawberries at my local market aren’t very good at all right now and we are CRAVING THEM!! Do you think I could try using frozen strawberries and just thaw them beforehand?
I think you can use frozen (thawed) too. I’ve made many muffins using frozen fruits and they turn out fine. The only thing I notice is the batter takes on some of the fruit color. Happy baking!
