So here we are at week two of “one armed meals” for my hubby and this time I went back to the grill and skewered up some bite sized morsels of goodness. Shrimp is absolutely perfect for him since they are naturally bite sized and skewer up nicely. Grilled shrimp and veggie kabobs are a great way to make a delicious meal for the one armed man while using up leftovers too. What would you do with a half bell pepper anyway?
For this dinner, I pulled out my veggie drawer and picked my leftover half bell pepper, grabbed whatever mushrooms I had left and my 1/4 yellow onion. I cut everything into bite sized pieces the same size as the shrimp so they would skewer nice and even.
But what’s a skewer without some fruit and pineapple is the perfect skewered fruit. Since I had a can of pineapple chunks handy, they went into the mix as well. I was just about to start the process when hubby says “hey, do we have any bacon?” Yeah, added bacon as well. I had three strips left. Perfect.
After assembly, and I’m sure you would agree that if you space each item well, you have nice mix of color, flavor and texture on the skewer. I marinated it with a mix of wine, melted butter, salt, pepper, garlic powder and parsley. I made enough to make sure I can brush some on during the grilling process. I wish I wrote down how much of everything I added, but it was one of those times where it was a little of this, a little of that, taste and voila, done!
While at Wal-Mart during the week, I found this new Bisquick Three Cheese Biscuit Mix that was a nice biscuit to go with the grilled shrimp and veggie skewers. All you need to do is add water, mix and bake!! They cooked up in a flash and were quite tasty too. This is an easy mix that you can whip up for a weeknight meal.
Boy were those tasty. And, hubby didn’t need help cutting his food and all I had to do was slide it off the skewer for him. Easy peasy. And the wine and butter marinade was perfect even on the pineapple chunks.
If you have a one armed spouse or child, the grilled shrimp and veggie skewers will make their mealtime easy for them with a lot less work. And it’s tasty too!
