Baked Mandarin Orange Chicken

Ingredients
- 2 Large boneless, skinless chicken breasts (fat trimmed and cut into chunks)
- 1/2 cup corn startch
- extra virgin olive oil (for frying)
- salt and pepper to taste
- 1 teaspoon balsamic vinegar
- 3 tablespoons ketchup
- 4 tablespoons light brown sugar
- 1 can mandarin oranges (15 oz can, pureed in a blender)
Note
If you want a thicker sauce, gradually add in corn starch, a 1/2 teaspoon at a time until you reach your desired consistency.

Hubby liked it too and he was also happy he didn’t have to slice anything, as he will be in his sling for another four weeks after shoulder surgery, which means another month of one-armed meals. His doc won’t start physical therapy yet, so we need to make things that are easy for him to eat. And tasty too. This mandarin orange chicken fit the bill on that one!
