Baked Mandarin Orange Chicken

May 12, 2014

Why go out when you can have your favorite take out Mandarin Orange Chicken at home?

Baked Mandarin Chicken. Better then takeout and the whole family would love this recipe.

I love me some Panda Express Orange Chicken. It’s one of my go to dishes there and I think it’s delicious but I don’t always want to spend the money. Plus, sometimes it’s a bit too heavy.  So the other night I decided I would do an orange chicken over rice. But…. poor planning on my part since there wasn’t a drop of orange juice in the house. But, I did have a couple of cans of mandarin oranges, so why not use them?  So off to my orange chicken adventure!

I love mandarin oranges anyway. They have a light taste to them and I think the juice they’re packed in (not the syrupy kind either) is delicious too. I popped open the can and poured it into the blender so it would make for a smooth sauce. It’s pretty good blended to… would be great in a smoothie.  Then I cooked the chicken the same way I did when I made a baked sweet & sour chicken then baked it in this sweet orange sauce.

Oh my was this good!!!  The sauce was much lighter then Panda’s orange sauce which I think is ideal for spring or summer weather. Since I used the juice in the can as well, my sauce came out thinner then what I’m used to. If you want a thicker sauce, I suggest you add some corn starch, about a half teaspoon at a time until it gets to the way you love it.
