When making sandwiches, I prefer sandwich thins or tortillas in place of a thick slice of bread. I would rather taste my sandwich fixin’s over the bread any day of the week. Not only that, but using less breads cut down on calories and carbs and tend to be less filling. I love tortillas as a snack. A quick zap in the microwave with a little butter and I’m in snack heaven. These tortillas are no exception. They make a great snack, especially when you’re on the go.
The first time I tried these, I had a black bean, cheese and avocado wrap sandwich. This was easy to make and quite filling. I first layered cheese on the tortilla and added black beans. I zapped it in the microwave for about 45 seconds, then added my avocado and voila… lunch was served. The one thing I noticed first was that the tortilla was so soft and easily wrapped up without cracking or breaking. This is vital for a wrap since you don’t want your sandwich stuffing to fall all over the place. Big plus for me.
The second recipe was for ground turkey enchiladas with a white sauce. This one was not as easy as the first one, but I like a good adventure in my kitchen and this fit the bill. I’ave made other enchiladas that I have shared with you before; Easy Weeknight Chicken Enchiladas and Crab and Spinach Enchiladas. This one was with ground turkey which I had purchased at the last Harmon’s meat sale and froze. I like turkey burgers and have used turkey in place of chicken in may recipes, so enchiladas were no exception.
Turkey Enchiladas in a Creamy White Sauce

- 2 tablespoons olive oil
- 1 clove garlic (chopped)
- 1lb lean ground turkey
- 1 heaped tablespoon fresh cilantro (chopped)
- 1/2 teaspoon cumin
- 2 tablespoons diced green chilis
- 1/2 teaspoon onion powder
- 1 teaspoon jarred jalapeno (chopped)
- 1/4 cup butter
- 1/4 cup flour
- 3/4 cups chicken stock
- 8oz fat free sour cream
- 1 Small clove garlic (chopped)
- salt and pepper to taste
- 4oz queso fresco cheese
- 5 La Tortilla Low Carb tortillas
- 6oz Fiesta Cheese Blend
This recipe is simple and tasty. The tortillas wrapped around the turkey just as well as it did the black bean and avocado wrap I mentioned before. The taste was exceptional and it really added quite a bit to my recipe.
