Another month for the Crazy Ingredient Challenge and this one was a doozy. Being that it was Easter and all, our committee selected the following ingredients; Peeps and Lemon.
Seriously? I love lemon and am not really a fan of Peeps. For those of you who have no idea what Peeps are, they are sugared marshmallow treats shaped like chicks and bunnies and come in various pastel colors. Really, if you had never heard of Peeps, you probably live on another planet (a nice warm welcome to my new extraterrestrial readers!).
You can imagine how clueless I was for this challenge. I knew I had to do something so off to Wal-Mart I went in search of inspiration. Yes, inspiration can come from there! As I was wandering through the Easter aisle I picked up my box of pink Peeps chicks. Then I took a detour to the spring and summer seasonal aisle and as I was looking at beach towels and dreaming of laying by the pool, it hit me… why can’t the Peeps hit the pool too? The Pool Party Lemon Peeps Cake idea was born.
This was actually fairly simple and since my creative cooking juices weren’t flowing well, I tapped into my creative decorative juices. All that was needed was cake mix, frosting, lemons, peeps and imagination. And food coloring… this was not coming together without food coloring. So I baked my Duncan Hines lemon cake mix (yep, I cheated) with some extra chunks of lemon in it. I wanted to have the extra tartness in the cake, plus it was my way of saying I created a cake. Well, me and ole Duncan did.
When the cake was done, I let it cool and mixed the vanilla frosting with blue food coloring until it came out a cool pretty blue. I frosted the lemon peeps cake with the blue frosting, then also cut straws so my little marshmallow swimmers had pool noodles. Then I sliced the lemon into rings and took out the lemon, leaving a rind ring. After all, the peeps needed floaties!

Super cute cake! I do not like the Peeps either, so this would be a great solution for me. I have a friend who’s husband buys her two cases of Peeps every year, to get her through until the candy corn comes out. That is a lot of Peeps. Thanks for linking up to Tips and Tricks!
