Hello everyone and happy Monday! I hope you all had a great weekend. It sure was nice here with the sun shining and the neighbors all emerging from their homes happy to be outside working in the yard. I enjoyed it Saturday but by yesterday morning I had a cold. YUCK! I’m glad I whipped up this Honey Shrimp on Saturday since I was in no shape to cook yesterday. Hubby and I keep passing this back and forth so last night’s dinner was leftover honey shrimp. It was just as tasty as Saturday.
This recipe is delicious and pretty easy to make so it was come in handy during one of those busy weeknights too. It just takes a few minutes to whip up some instant rice and of course shrimp cooks very quickly as well. The honey sauce is sweet and tangy and perfect for the shrimp. One thing to note; if you’re going to make this, do not substitute miracle whip or anything similar in place of the mayonnaise. It really messes with the flavor.

- 1 1/2 cup water
- 1 tablespoon butter
- 1 chicken bullion cube
- 1 1/2 cup instant white rice
- 3 tablespoons mayonnaise
- 3 tablespoons honey
- 1.5 tablespoons milk
- 1 Large egg (beaten)
- 1/2 cup corn starch
- 1lb large shrimp (peeled, deveined, tails left on)
- 1/4 cup olive oil (for frying)
Crispy and full of flavor and hubby loves him some honey shrimp! I was trying to duplicate the walnut shrimp from a local restaurant called Asian Star. I just love those shrimp and although this comes pretty close, it’s not perfect, but we don’t care. Might I suggest that when you make this, you double the sauce recipe. It goes well on other foods such as salmon and chicken. Hubby said it would be great on ice cream too, but I think I’ll leave that up to him to try.
I topped mine with sliced almonds since I didn’t have any walnuts in my pantry. I think the almonds added something extra to this meal. I think the cornstarch and egg “batter” was light and did not weigh down the shrimp. In all, a wonderful and easy meal on a busy weeknight.
