Pan Seared Rosemary and Parmesan Chicken

Rosemary Chicken


Happy Wednesday night! Having Chicken for dinner? Chicken seems to be a staple in most households and is one of the easier meats to cook in my opinion.  The best part is that there are endless ways to cook chicken from grilling to baking. This recipe for rosemary and parmesan chicken took the foods I had in my fridge and spice racks and cooked up quickly.

This recipe was inspired by one I saw on Jamie Oliver’s 15 Minute Meals. Only I added garlic because, face it, I put garlic in everything.  The blend of garlic and rosemary really brought out good flavor in the chicken. And, as a money saver, I used two larger chicken breasts, cut them in half, then pounded them out so my two chicken breasts became 4 servings of rosemary parmesan chicken instead of just two. Way to make a buck stretch!

Pan Seared Rosemary & Parmesan Chicken

Ingredients

  • 2 Large boneless skinless chicken breasts (cut in half and pounded flat)
  • 2 - 3 sprigs fresh rosemary (stems removed)
  • 1/4 cup shredded parmesan cheese
  • 1/2 tablespoon fennel
  • 2 tablespoons olive oil
  • 2 cloves garlic (chopped)
  • 4 Slices maple flavor bacon
  • 1/2lb white button mushrooms (sliced)

Note

Like some spice? Add crushed red pepper flakes

Directions

Step 1
After the chicken is pounded flat, add equal amounts of the rosemary, parmesan and fennel to each side of the chicken, pressing the seasoning into the chicken
Step 2
In a large deep skillet, add the olive oil and heat until hot. Add the garlic and cook until fragrant.

Step 3
Add the chicken to the hot pan and cook for 4-5 minutes then turn. When you turn the chicken, add the bacon. After another 4-5 minutes, flip the bacon and add the mushrooms.
Step 4
Turn to low and cover, cooking for another 3 minutes until mushrooms are cooked. Serve with your favorite side dish.

A simple meal that rocked the house. I had it with Garlic Polenta since Jamie Oliver cooked it with garlic (he used store bought to stay within the 15 minute mark) and some tomato sauce. I also had a side of asparagus for hubby. I’m not the biggest fan of asparagus and he thought “more for me.” In any case, this was a quick cook for a busy weeknight and both hubby and I loved it.

So next time you have a pound of chicken and are out of chicken ideas, try the rosemary and parmesan chicken above. It will have them asking for more.
