Crazy-Simple Minty St. Patrick’s Day Dessert

St. Patrick's Day Dessert

In just a few days it will be St. Patrick’s Day and everything turns green from our outfits to our food. I remember as a kid going to McDonald’s for those Shamrock Shakes that came out this time of year. I loved them! I jumped on the green bandwagon and made a super easy St. Patrick’s Day dessert that took no time at all to put together and took hubby less time then that to eat one.


To make these delicious green desserts, you only need three things; a box of Great Value pistachio pudding mix, some milk and a box of Girl Scout Thin Mint cookies.  And it’s done is four easy steps:

  • Mix the pudding by adding 2 cups of milk to the mix.
  • Chill in the fridge for about 30 minutes
  • Crush a half sleeve of cookies, minus the garnish and the one’s you eat while making this
  • Layer pudding and cookies in a cute dessert cup and garnish with a half cookie, if you have any left after sneaking one or two like I did.

There you have it!!  Dessert so good and so quick you spend no time in the kitchen and lots of time with family searching out four leaf clovers or your other St. Patrick’s Day activities.  So what are your plans? Do you do anything special? Let me know.

    My 10 year old daughter insisted I stop by from Tuesday’s Table when she saw the picture of your St. Patty’s dessert. Now she’s dying to make it! It’s so easy, as soon as we find a box of Thin Mint cookies I think we’ll give it a try! Thanks for sharing! HUGS
