Got soup? In the chilly winter season, soup is often on the menu. And, making it in the slow cooker makes it even better. For a delicious slow cooker minestrone soup, all you need are a few simple ingredients you probably already have in your pantry. Put it all in the slow cooker, head off to church or work and by the time you get home, dinner is ready.
During the winter when the temps drop to below freezing, soup becomes one of my favorite foods. It reminds me of when I was a kid and mom would make soup with buttered saltines. That was one of our favorites when it got cold. She would cook it stove top until just perfect.
These days, I use the slow cooker for soups, stews and chilis. I love how nice the house smells when there is a pot of soup brewing. This one is hearty without being too heavy and perfect with a wedge of garlic bread.
Slow Cooker Minestrone Soup

- 2 cans light red kidney beans (drained)
- 32oz chicken broth (low sodium)
- 1 can fire roasted canned tomatoes (14.5 oz, with juices)
- 1 can basil garlic and oregano tomatoes (14.5 oz, with juices)
- 1 can cannilini beans
- 1 1/2 tablespoon garlic (minced)
- 1 Large carrot (peeled and sliced)
- 1/2 Medium yellow onion (chopped)
- 1 tablespoon italian seasoning
- 1 can water ((use the tomato can))
- 1 cup fresh green beans (snapped and cut in thirds)
- 2 cups fresh spinach
- 1 cup cooked pasta (optional)
Substitute black beans and add corn for a southwest flair
|Put all ingredients in the slow cooker except the green beans, spinach and pasta. Set on low and set timer for 4 hours.|
|At the 3 hour mark, add the green beans. At the 3.5 hour mark, add the spinach and cook it down.|
|Add the cooked pasta 15 minutes before serving. Adding too early may make the pasta mushy. Serve.|
This is a wonderful soup that would also be great with a side salad This is made vegetarian but if you want some meat with it, add some white meat chicken or ground turkey. Whatever you prefer, and you can customize it to suit your family’s tastes.
