Have you ever watched Jamie Oliver’s 15 Minute Meals show? I try to catch it every Saturday morning on my local CBS affiliate since it’s one of the few cooking shows I get. You see, I don’t subscribe to cable or any of the satellite services so what we get is what comes over the air. I know, hard to believe right? But there are shows to be seen! and Jamie’s is one of them.
There are a few PBS shows that I can tune into, however I really love Jamie’s 15 Minute Meals. This past week, he did a rosemary chicken with polenta and his happy cow burgers with slaw. I was making salmon that night and that slaw looked like the perfect side dish. It only has a few simple ingredients, but it’s big on flavor. And with the red cabbage used, the slaw has a gorgeous color as well.
Jamie Oliver’s Old School Slaw
1/2 white cabbage, shredded large
1/2 red cabbage, shredded large
1/2 red onion, shredded small
4 heaping tablespoons fat free plain yogurt
1 heaping tablespoon whole grain mustard
I didn’t have the whole grain mustard, so I used spicy brown mustard. I also used shallot instead of the red onion since I prefer the flavor of a shallot. To assemble, put all your ingredients into a large bowl and toss until completely coated. I chilled mine in the fridge for about an hour before dinner.
Light and refreshing, this slaw is heavenly!! Paired up with grilled salmon, it really completed our meal. The one thing I like a lot about it is that it’s not full of mayo like some slaws can be. Using fat free yogurt did not take anything away from it, it just made it more calorie friendly.
I will admit, hubby wasn’t a big fan of this old school slaw. His favorite slaw is from KFC and this one tastes quite different and I don’t think he’s accustomed to it. I hope he learns to love it, but in the meantime more for me!!!
