Fresh Tomato Angel Hair with Spinach and Broccoli Pasta Sauce

Spinach and mushroom pasta sauce


Since I got my KitchenAid pasta attachments, I’ve been making pasta like a fiend.  A couple of weeks ago, I shared with you a fresh spinach fettuccine recipe in a sun dried tomato sauce that was amazing. This time, I broke out the angel hair pasta cutter and made a tomato angel hair pasta that was incredibly fresh and light. You take your basic egg pasta recipe and add 1 to 2 tablespoons of tomato paste. Then, I made what I like to call my “green sauce” which was a combination of broccoli and spinach. Talk about fresh pasta!!

Garlicky Spinach and Broccoli Pasta Sauce
Serves 4
Prep time 15 minutes
Cook time 15 minutes
Total time 30 minutes

Ingredients

  • 2 tablespoons extra virgin olive oil
  • 1 scallion (sliced into rings)
  • 3 cloves garlic (chopped)
  • 1 cup dry white wine
  • 1 head broccoli (cut into small florets)
  • 1-1/2 cup fresh spinach leaves (packed)
  • grated parmesan cheese to garnish
  • 8oz angel hair pasta (fresh or boxed)

Directions

Step 1
In a deep skillet, heat olive oil over medium heat. Add garlic and scallion and cook until fragrant.
Step 2
Add wine and broccoli and cook until broccoli softens a bit. Add the spinach leaves and cook until wilted.

Step 3
While the broccoli is cooking, add water to a large pasta pot and cook pasta according to package directions. If using fresh pasta, cook 2-5 minutes or until it floats. Drain.
Step 4
Add the pasta to the sauce mix and cook until noodles are coated and heated through.

What a delicious and quick meal to put together. It’s not necessary to make your own pasta every time. I mean, who has time for that with kids, sports and homework?  This is a good one to make when you’re going to a blog conference for the weekend and leaving hubby behind. It re-heats very well and he won’t starve. I know. I’m leaving tomorrow and he has plenty to eat while I’m gone.
