Since I got those pasta attachments for my KitchenAid mixer from my employer, I’ve been a pasta making machine. I’ve made spinach fettuccine, tomato angel hair and now this time it’s whole wheat pasta. I was extra ambitious this time and even milled my own flour using my Wondermill grain mill. This can present it’s own difficulty as my kitchen is the size of a postage stamp. But with planning and patience, it worked out great.

There are many recipes out there for whole wheat pasta and I found one using my cookbook “The Mixer Bible.” I just love this book and have made many recipes from it since I purchased my KitchenAid.  This one has flour, eggs and a bit of salt. Easy peasy, but boxed pasta works just as well and it takes a lot less time.

Whole Wheat Pasta with Mushrooms and Brats

Whole Wheat Pasta with Mushrooms and Brats
Serves 4
Prep time 10 minutes
Cook time 20 minutes
Total time 30 minutes

This pasta has a nutty flavor and an excellent texture.

Ingredients

  • 1 tablespoon extra virgin olive oil
  • 4 bratwurst or mild italian sausage links
  • 1 tablespoon butter
  • 2 Large garlic cloves (chopped)
  • 1/2 teaspoon italian seasoning
  • 1/4 Medium red onion (chopped)
  • 1 1/2lb button mushrooms (sliced)
  • 8oz whole wheat pasta (fresh or boxed)
  • 1 cup dry white wine
  • 1/2 cup heavy cream
  • salt and pepper to taste
  • grated parmesan for garnish

Note

Use steak instead of the brats/sausage for a meatier flavor

Directions

Step 1
Add the olive oil to a skillet and cook the brats/sausage on medium heat until done, about 10 minutes turning occasionally. Set aside.
Step 2
In the same pan, add the garlic, italian seasoning, butter and onion, scraping up any of the brats/sausage that stuck to the pan. Add sliced mushrooms and cook on medium for 5 minutes. While that is cooking, make the pasta. In a large pot of boiling water, cook the spaghetti according to package directions. If using fresh, cook until pasta is floating on top. Drain.
Step 3
To the skillet, add the wine. Slice the brats/sausage into circular pieces and add them to the skillet. Add the cream and blend everything together. If you want your sauce thicker, you can add up to a Tablespoon of cornstarch (optional).

This turned out better then expected, although I made quite the mess making the pasta. Hubby just loves sausage and for this recipe, we used the mild italian sausage we had on hand, but it’s excellent with bratwurst too. It was creamy and full of flavor and texture. The nuttiness of the whole wheat pasta gave the dish some extra depth.

Wonder what I will do next???  I’ll take suggestions!

    This looks delicious. We eat only whole wheat pasta and mushrooms are my favorite.

    Do you have a good substitute for the wine? I tend to use broth, but wonder if there is a better suggestion?

    Looks wonderful. We like brats quite a bit. Don’t you just love your KitchenAid mixer? I got a new one for Christmas because my old one wanted a rest. It’s 16 years old. I love it!

    Whole Wheat Spaghetti is already healthy but with a twist of mushroom, this is the next level of healthiness! Amazing where you can add mushroom to almost any dish and makes it healthier. A sure must try!! Can’t wait for another recipe to try!! Thank you!
