Happy 2014 everyone! If you are like me, you set some new years resolutions right when the clock struck midnight last week. And I know many of you set one like me; to eat better and healthier. Now, you’re probably looking at the title of this post and thinking why did she set that resolution when she’s posting a creamy recipe. Well creamy does not always mean full fat. There are many low fat or fat free substitutes out there that will be a perfect replacement for it’s full fat counterpart. But the biggest complaint I hear is that the low fat alternative have no flavor or taste so bland no one bother’s with it. For me, it’s all about seasonings and adding in flavorful fat free items such as shallots, red onion or my all time favorite; garlic!
This recipe for creamy mustard salmon uses just that; fat free items and lots of flavor from garlic, onion and two types of mustard. By experimenting with various flavors, your adventure in the kitchen will add that flavor while slaying the extra calories of full fat items. Now, I did use 2 Tablespoons of regular butter, but you can substitute this too. I find that using a small amount of regular butter adds more flavor then a margarine, but that is up to you.

Baked Salmon in a Creamy Mustard Sauce

Ingredients
- 1/4 red onion (chopped)
- 2 tablespoons butter
- 5-6 cloves roasted garlic
- 1 tablespoon honey mustard (I prefer Beaver Valley)
- 1 tablespoon powdered mustard (I prefer Colmans)
- salt and pepper to taste
- 1/2 cup fat free sour cream
- 2 salmon steaks (about 6-8 ounces each)
Note
Add fresh spinach or mushrooms to the sauce to give it more texture and flavor.

The blend of the two mustards really rocked the sauce. I use the Colman’s dried mustard since it has a bit of a kick to the taste and adds just a bit of heat and the sweetness of the honey mustard compliments it very well. By using fat free sour cream, the calories were reduced nicely for a creamy mustard salmon that you can feel good about.
