Good morning everyone!
It’s a beautiful sunny clear morning here in Utah and we had a fresh dusting of snow last night. It’s so pretty and sparkly in front of our home this morning and it just makes me smile. It’s a nice relaxing morning here. Have my coffee, my blanket over my legs and I’m so content. After the hub-bub of Christmas and New Years, I deserve a relaxing morning, right?
I call it the calm before the storm. Kids are back in school next week, all the folks that were on vacation will flood the roads during commute time and all the other activities start up again. I am even starting a photography class on the 14th to enhance my skills and learn to use all the cool features on my camera. What this all means is weeknights are going to get hectic again and time to make a delicious dinner can get limited. We all want a good meal on the table quick when we’re running crazy.
I have a solution for you right here. I had leftover dried stuffing that had to be used so why not use it as a crunchy coating to baked pork chops?

Baked Crunchy Stuffing Crusted Pork Chops

Ingredients
- 2 tablespoons butter
- 1 large egg
- 2 tablespoons milk
- salt and pepper to taste
- 1/4 teaspoon garlic powder
- 1/4 teaspoon poultry seasoning
- 1/2 cup dry seasoned stuffing mix or bread crumbs (stuffing mix broken up in small pieces)
- 1/2 teaspoon grated parmesan cheese
- 2 pork chops (1/2-3/4 inch thick)
Note
Add crushed red pepper to the stuffing mix to give it some extra zing

Easy peasy right? These crunchy baked pork chops whip up in a snap and are moist and delicious. The stuffing coating got super crunchy after baking. Something so simple turned out wonderfully delicious and dinner was on the table before you could say “come and get it.”

Will try these tonight. I have the worst time with pork but I am going to follow this to a tee. My problem is that I don’t ever follow directions but I have this saved so as long as I stick to the plan, maybe for once I will have enjoyable chops! LoL! Thanks for sharing!

There is no mention of melted butter in the ingredients list. How much butter do you use?
Two tablespoons. It’s at the top of the ingredients list. I love the crunch on this. If you like spicy, try adding some Mrs. Dash Jalapeño seasoning to your bread crumb mix. I’ve tried it and it’s a nice twist on the recipe
