Delicious stuffed turkey roast wrapped in bacon is sure to make the whole family happy. I know hubby thought this one sounded delicious, especially since he likes bacon with everything. By using a lean bacon with less fat, you cut down on any grease in the pan. Plus, the bacon flavor just infuses the turkey leaving you with a moist delicious roast.
Mushroom & Spinach Stuffed Turkey Breast

- 2 tablespoons extra virgin olive oil
- 2 tablespoons garlic (chopped)
- 1/2 Medium shallot (cut into rings)
- 1 cup fresh spinach leaves (packed)
- 4-6 Medium white button mushrooms (sliced)
- 1/8 cup seasoned bread crumbs
- 2oz swiss cheese (shredded)
- 1 tablespoon grated parmesan cheese
- 1 - 1/2lb turkey breast roast
- salt and pepper to taste
- poultry seasoning to taste
- 6-7 Strips bacon
Substitute pepper jack cheese for a bit of heat
Take a look at this bad boy after it comes out of the oven. By wrapping it up in the cooking twine, it kept the bacon from falling off the turkey and held the juices inside.
As soon as I sliced into it, I knew it would be moist and tender. The spinach and mushroom stuffing took on more flavor from the turkey and it looked pretty too.
