Peppermint Truffle Cookies
As Christmas gets closer, I’ve been bringing out my inner Martha Stewart and have been doing lots more baking then the I usually do… or have ever done for that matter. I’m so inspired by the pictures in the holiday magazines I flip through at the checkout counter.  It’s the holidays and I got the spirit. It’s time to break out the peppermint and the gingerbread and all those traditional holiday flavors. Dust off the cookie cutters and decorate the house!

Thanks to McCormick, I had the opportunity to create this decadent chocolate peppermint truffle cookie that is mouthwatering good and simple to create. It takes just a few ingredients but the result is a cookie worthy of it’s own show on Food Network. And this recipe features one of my favorite McCormick products; Pure Peppermint Extract.

These decadent cookies are rich in chocolate with a hint of peppermint

Ingredients

  • 8oz bittersweet baking chocolate
  • 1/2 cup butter ((1 stick))
  • 1 cup sugar (divided)
  • 1 egg
  • 1/2 teaspoon McCormick Pure Peppermint Extract
  • 2 cups flour
  • 36 milk chocolate kiss-shaped candies

Note

You can drizzle white frosting on top or even add colorful sprinkles for any occasion

Directions

Step 1
Pre-heat oven to 350 degrees. Microwave the baking chocolate and butter in a large microwavable bowl on high 1 - 2 minutes or until butter is melted. Stir together to make sure there are no chocolate lumps left and it's blended together. Let cool about 10 minutes
Step 2
Add 1/2 cup of the sugar, egg and peppermint extract. Beat with an electric mixer on medium speed until well blended. Gradually bet in flour on low speed until well mixed.

Step 3
Shape dough into 1-inch balls. Press a chocolate kiss ccandy into the center of each ball, forming dough around the candy to enclose it. Roll in the remaining sugar to coat and place the balls 1-inch apart on a greased baking sheet(s).

Bake 9-11 minutes or until cookies are set. Cook on the baking sheet(s) for 5 minutes, then remove to a wire rack to cool completely.

Can I just rename this “heaven in a chocolate ball?” It is a chocolate explosion in your mouth of rich, fudgy goodness and an extra sweet treat in the center. These are magnificent! So moist and chewy and they take the traditional cookie to a new level. I love the round shape which gives it a unique appearance compared to other baked cookies.

Hubby and I had a difference on opinion. He wanted less chocolate flavor and more peppermint, I liked it the way it was made with just a hint of peppermint. So, if you are a big fan of the minty flavor, by all means add more.  Hubby’s favorite part was the milk chocolate kiss candy hidden in the center.  He also thought it was a good milk-dunking cookie and that was his midnight snack when he got off work last night.  He was very pleased the cookie held it’s round shape and did not fall apart into his glass of milk.

Take this plate of goodies to your Christmas event or to your new years eve parties. They are sure to be a big hit!
