Isn’t it fun when we all have some special holiday dish that keeps getting requested year after year? For my sister, it’s her tomato appetizer with fresh mozzarella and basil. For hubby, it’s his Scotch Cake. For me, it’s my green bean casserole. I call it my “no cans in sight” casserole, but family calls it delicious. Naturally, at Thanksgiving my nephew was hosting the big dinner and I had to bring it. My casserole starts with fresh green beans and fresh mushrooms. Add some garlic, onion and swiss cheese and it’s a savory side dish to turkey or ham.
I created this recipe when I still lived in California, and that was over 15 years ago. It’s something I put together based on similar recipes I had tasted over the years and some of my own personal preferences. I just love mushrooms sauteed in garlic and onion so that was my base of what I added to my green beans. And for selecting swiss cheese over another variety, I just like the flavor, plain and simple. By the time I had this the way I wanted, my holiday green bean casserole was perfect. Now I’m sharing my recipe with you so you can enjoy it with your families this holiday season

Ingredients
- 2lb fresh green beans (ends snapped off, snapped in two)
- 1lb fresh white mushrooms (rinsed, stems cut off and sliced)
- 3 cloves fresh garlic (chopped)
- 4 tablespoons butter
- 1 tablespoon extra virgin olive oil
- 2 Large shallots (cut into rings)
- 16oz swiss cheese (shredded)
- 1/4 cup seasoned bread crumbs
Note
You can broil this for a few minutes at the end of baking for a crunchy top
