This healthy and easy southwest breakfast wrap works on the go or if you just want an easy breakfast to eat and to relax on the patio. I have a corn and tomato salsa that I make and I usually have a batch on hand for a quick spicy addition to any dish. You can find that recipe here. Now, when I make it I soak dry beans overnight, but canned will work in a pinch.
For the southwest breakfast wrap, all you need are a few ingredients: Eggs, bacon, cheese, the salsa (or store bought if you prefer) and a whole wheat wrap.
I like my wrap without bacon. Hubby will put bacon in anything and I’m surprised he has not yet sprinkled in on his nightly ice cream (yuck). For this wrap, cook up the eggs anyway you want. I scrambled mine but usually enjoy my eggs over easy when I’m not wrapping it up in a tortilla.
Place all your goodies in the center of the tortilla and wrap ‘er up. I love the nuttier flavor of the whole wheat tortilla and I feel it adds a lot to the breakfast. I use whole wheat when I can. I think it just gives food a better flavor, don’t you think?

I love wraps, like you I usually like my eggs over easy unless in a wrap. I think over easy eggs in a wrap would get a little messy. Thanks for sharing on Tuesdays With a Twist.
