Bacon Wrapped Chicken


You’re probably looking at the post title and thinking Rhonda? Who’s Rhonda? This is LORI’S Culinary Creations!! However, let me tell you about this recipe. My friend Rhonda recently had us gals over to her place for a girls night dinner. She made this dish and it was to die for!

This dish is just made for dinner parties. And the cool thing about it is that you can prep it ahead of time and pop it in the oven just before guests arrive. When Rhonda made it for us, there were 6 of us ladies who were there for dinner and they all gave rave reviews. I, asked, well BEGGED for the recipe and Rhonda obliged. She said this is one that is requested often and it’s her daughter’s favorite. I made a change or two in order suit hubby and my taste (aka added garlic) and created this wonderful beef & bacon wrapped chicken dish. Thanks Rhonda.

This recipe contains one food I had not even heard of until that girls night dinner; Armour Dried Beef. It’s not easy to find and I located it at my local Harmon’s with the canned meats like Spam and Vienna Sausages. Not an area of the store I usually go to, but it was worth it. I will say, it’s not cheap at $3.99 for a 4.5 oz jar, but it sure made a nice wrap around the chicken roll.  If you use it, just be sure to rinse the slices in warm water prior to use and store any unused slices in the fridge.

Rhonda’s Saucy Beef & Bacon Wrapped Chicken

A savory sauce seals in the juices on this delicious baked chicken

Ingredients

  • 1 tablespoon extra virgin olive oil
  • 1 tablespoon butter
  • 1 clove garlic (chopped)
  • 1 Large shallot (cut into rings)
  • 1/2 teaspoon dried parsley
  • 1/4 teaspoon crushed red pepper
  • 4oz mild cheddar cheese (cut into)
  • 2 Large chicken breasts (cut in half crosswise)
  • 10 Slices Armour Dried Beef (+ 2 slices for the sauce, rinsed in warm water)
  • 5 Strips bacon
  • 1 cup fat free sour cream
  • 1 cup Campbells Cream of Chicken soup (straight out of the can)
  • salt and pepper to taste

Note

You can substitute prosciutto for the dried beef if you can't find it.

Directions

Step 1
Pre-heat oven to 350 degrees.

in a medium sauce pan, add the olive oil and butter and heat until butter is melted. Add the garlic, shallots, parsley and crushed red pepper. Sautee until shallots are translucent. Set aside.

Step 2
Lay one half breast on a large cutting board and cover with plastic wrap. Pound thin, flipping once. Repeat with the remaining chicken. Since one piece came out so large while pounding, I cut it in half which is why this serves 5 not four. Season the chicken with salt and pepper.

Step 3
Take 1/4 of the cheese and place it in the center of a piece of chicken. Roll it up. Take two slices of the Armour dried beef and place it around the chicken. Wrap with a piece of bacon and secure it with a toothpick. Repeat until you have five rolls. Place these in a glass baking dish. You should always place the bigger rolls on the outside edge of the dish and the smaller ones in the center. This helps your chicken cook evenly since the outside of the dish will heat up faster.

Step 4
In a medium bowl, mix the sour cream and soup. Add the garlic & shallot mix and blend together. Roll up the last two slices of dried beef and cut into strips. Add to the sauce. Add salt and pepper to taste (optional) Spoon the sauce over the chicken. Cover with foil and bake for 45 minutes. Remove foil and bake an additional 15 minutes.

Bacon Wrapped Chicken

Talk about one scrumptious bacon wrapped chicken dish! Hubby and I just loved it…. well I already loved it, but he’s a new fan of Rhonda’s chicken.  He practically drank the sauce… in fact, I thought I saw him reaching for a straw. I loved the addition of the garlic and shallots to the sauce since it gave it a nice flavor boost and you know how much we love garlic.  It was just was totally mouthwatering!!

Because the sauce cooked with the chicken and the bacon, those flavors merged beautifully with the sauce and just took it to new heights.
