Chicken, chicken, chicken. What to do…. there are days I’m not even sure and that’s where my adventure comes in. With this recipe, the addition of cherry tomatoes, garlic and a hint of whiskey makes this bruchetta chicken a delicious weeknight dinner or for your next dinner party.
This bruschetta chicken recipe has an abundance of flavor. And it comes out juicy since you sear it prior to baking. That keeps it from being overly dry. Also, don’t let the 2-hour prep time scare you. It’s for the marinade!

Ingredients
- 2 Large Boneless Skinless Chicken Breasts (sliced lengthwise)
- 1/4 cup Balsamic Vinegar
- 1 tablespoon Chopped garlic
- 1 tablespoon Seagrams 7 whiskey
- 10 Cherry tomatoes (cut in half)
- 1/4 cup Sweet Onion (chopped)
- 1/4 teaspoon garlic (chopped)
- 1 tablespoon Balsamic Vinegar
- 1 tablespoon Extra Virgin Olive Oil
- 2oz mozzerella Cheese (shredded)
- sliced fresh basil (for garnish)
Note
Add more garlic or mushrooms for a nice variation
Directions
Step 1 | |
In a large ziplock bag, add the chicken, balsamic vinegar, garlic and whiskey. Mix until chicken is well coated. Place in the fridge for 1-2 hours | |

In a bowl, mix the tomatoes, onions, garlic, vinegar and olive oil. Set aside. | |
Step 3 | |
Preheat the oven to 350 degrees. Remove the chicken from the bag and sear on both sides in a saucepan until browned, but not all the way cooked through. | |
Step 4 | |
Add the chicken to a foil lined cookie sheet. Add the tomato onion mix to the top and top each piece with 1/4 of the cheese. Bake for 30 minutes. Garnish with basil and serve. |

Chicken is so versatile as it is and this one gives chicken that extra something that takes it to a whole new level. I love bruschetta when I go to an Italian restaurant, so making a bruchetta chicken sounded fantastic. Now even though the chicken doesn’t look all that appetizing in the plastic bag, don’t let that deter you. Once all the ingredients are put together, this is one amazing meal. And who doesn’t like a little cheese on top too?
This bruschetta chicken was a hit with the hubby although he didn’t add the tomatoes to his piece. I served it with fresh broccoli for a well rounded nutritious meal.
